  • 1 cup tomatoes, cut into large chunks
  • 2 Tbsp. sliced shallots or yellow onions
  • ½ cup ricotta cheese, part skim
  • 1 tsp. crushed garlic
  • 1 tsp. olive oil
  • Black pepper, to taste
  • 4 slices multigrain bread
  • 1 Tbsp fresh basil, chopped
  • Directions
  • Preheat oven to 400°F.
  • Toss tomatoes and shallots in olive oil and season with black pepper.
