Fish in Parchment with Potato, Zucchini and Onions
Ingredients
  • 6 small white-skinned or baby Yukon Gold potatoes (¾ to 1 lb.)
  • 1 medium or 2 small zucchini
  • 1 medium or 2 small onions
  • 2 small plum or Roma tomatoes, very thinly sliced
  • About ½ cup white wine or dry vermouth
  • ¼ cup EVOO
  • ¼ cup flat-leaf parsley leaves, finely chopped
  • Herbes de provence
  • 8 cloves garlic, crushed
  • 2 sprigs fresh oregano, leaves stripped from stems and chopped
  • Salt and pepper
  • 4 thick-cut fillets sustainable cod (6 to 8 oz. each)
  • 1 tsp. crushed red pepper
  • 1 lemon, zested (about 1 ½ tsp.)
  • 4 pats butter
