Bread Pudding with Creme Anglais (From Work Cafeteria)

Ingredients
  • ¾ loaf of white bread
  • 3 cups half-and-half
  • 4 cups heavy cream
  • 2 cups milk
  • 8 cups eggs (about 32 eggs)
  • ¼ cup vanilla
  • 2½ cups sugar
Steps
  1. Cut bread into large cubes, set aside.
  2. Spray a 13x9x2" pan with cooking spray. Add bread cubes to prepared pan.
  3. Mix remaining ingredients in bowl, then pour over the bread in pan. Make sure the bread is completely coated with liquid.
  4. Place the pan in a larger pan filled with water (bain maree).
  5. Bake on 350° oven for approximately 1 hour. It should be firm to the touch in the middle.
