The Athenian Chicken Gyros
Ingredients
  • 4 boned, skinless chicken thighs
  • 1 boned chicken thigh, skin on
  • ½ white onion
  • 4 pita breads
  • 8 to 12 tbsp tzatziki
  • A few crisp Cos (Romaine) lettuce leaves, shredded
  • 4 ripe tomatoes, sliced or coarsely chopped
  • 1 medium red onion, thinly sliced
  • oregano potato fries or French fries
  • chopped flat-leaf (Italian) parsley, for sprinkling
  • smoked paprika, for dusting
  • subheading: For the marinade:
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp freshly ground black pepper
  • ½ tbsp sea salt
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp grated lemon zest
  • juice of 2 lemons
  • 2 tbsp olive oil
