PAT’S RICH FRUIT CAKE COOKED IN THE INSTANT POT LUX
Ingredients
  • 500gms Self Raising Flour
  • 250gms Vitalite
  • 200gm Dark Muscavado Sugar
  • 300gms Mixed Fruit and Peel
  • 3 heaped teaspoons mixed spice
  • 4 large eggs
  • 125mls milk
Steps
  1. Rub the Vitalite into the flour until it resembles fine breadcrumbs, stir in the mixed spice
  2. Mixed through the muscavado  sugar then the mixed fruit, lightly beat the eggs, make a well in the cake mixture and pour in the eggs and milk, gently mix through, pour into a greased ceramic inner and cook for 75 minutes on the normal cake setting then NPR for 10minutes
