1 cup Masa Harina (found in Mexican food section of grocery store)

3 cups water

1 cup red enchilada sauce

16 ounces Velveeta Cheese (small box), diced into cubes

1 teaspoon salt

1 teaspoon chili powder

½ teaspoon ground cumin

subheading: For Tortilla Garnish:

3 to 4 corn tortillas

1 Tablespoon vegetable oil

subheading: For Pico de Gallo:

1 medium tomato , diced

1 heaping Tablespoon minced red onion

1 Tablespoon lime juice

1 handful cilantro (approx. 3 Tablespoons), chopped

Salt and Pepper , to taste
