Ingredients
- Pre heat oven to 200C / 180C FF. Bake for 35 to 40 minutes until golden brown.
- 500gr chicken breast (I used thigh meat - better flavour)
- 1 tblspn oil
- 40gr butter
- 1 small onion
- 3 cloves garlic
- 1 tsp salt
- 1 tsp pepper
- 1tsp red chilli flakes
- 1 tsp dried herbs
- 1 stock/pot cube (I used a whole Continental Sensations jellied beef cube - they're good)
- 30gr plain flour
- 350ml milk
- 100ml water (I just used more milk - or cream, or white wine)
- 150gr mixed veg ((I used fresh veg cut into small cubes potato, leeks, broccoli, carrots then peas)
- 1 puff pastry sheet (Careme if you can get it) - cut into smallish (4cm) squares
Steps
- **Make sure the filling has completely cooled before adding pastry to bottom (if doing).
- Heat oil & butter. Soften onions & garlic, add chicken & seasonings then add stock cube.
- When chicken is cooked through, add flour & cook 5 mins to get the uncooked flour taste out.
- Add milk & wine, cream or water if too thick).
- Add mixed cooked vegetables.
- If using a fresh casserole dish, place cooked mixture in dish then cover with the cut pastry in squares placed around edge of dish - they can slightly overlap as you cover into the centre.
- Egg wash the pastry then bake & enjoy.
