Ingredients
  • Pre heat oven to 200C / 180C FF. Bake for 35 to 40 minutes until golden brown.
  •  
  • 500gr chicken breast (I used thigh meat - better flavour)
  • 1 tblspn oil
  • 40gr butter
  • 1 small onion
  • 3 cloves garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1tsp red chilli flakes
  • 1 tsp dried herbs
  • 1 stock/pot cube (I used a whole Continental Sensations jellied beef cube - they're good)
  • 30gr plain flour
  • 350ml milk
  • 100ml water (I just used more milk - or cream, or white wine)
  • 150gr mixed veg ((I used fresh veg cut into small cubes potato, leeks, broccoli, carrots then peas)
  • 1 puff pastry sheet (Careme if you can get it) - cut into smallish (4cm) squares
Steps
  1. **Make sure the filling has completely cooled before adding pastry to bottom (if doing).
  2. Heat oil & butter. Soften onions & garlic, add chicken & seasonings then add stock cube.
  3. When chicken is cooked through, add flour & cook 5 mins to get the uncooked flour taste out.
  4. Add milk & wine, cream or water if too thick).
  5. Add mixed cooked vegetables.
  6. If using a fresh casserole dish, place cooked mixture in dish then cover with the cut pastry in squares placed around edge of dish - they can slightly overlap as you cover into the centre.
  7. Egg wash the pastry then bake & enjoy.
