Lilikoi bread by Rich Lum
Dessert bread that's sweet and tart. Lilikoi is also known as Passion Fruit

Ingredients
  • 1 cup of white sugar
  • ½ cup of butter.. (RT) = Room Temperature
  • 2 whole eggs (RT)
  • ¾ cup Lilikoi purée (RT)
  • 2 cups AP flour
  • 1.5 teaspoons baking powder
  • ½ teaspoon Hawaiian sea salt
  •  
  • Bundt pan(s) I used two 3 cup pans but a 6 cup pan will work
  • Grease and flour your pans
  •  
  • Optional....lilikoi glaze
  • Optional... Lilikoi glaze with chopped Macadamia nuts on top
  •  
  • Glaze
  • 1 cup of powdered sugar
  • 2 tablespoons Lilikoi purée - add more purée , ½ teaspoon at a time until you reach the desired consistencyv
Steps
  1. Method
  2. Cream the butter and sugar together
  3. Add eggs and mix until smooth
  4. Stir in Lilikoi purée
  5. Add in all dry ingredients and mix until combined
  6. Fill your pan(s) to about 1" below the top
  7. Cover with a paper towel and foil
  8. Cooking
  9. Add 1.5 cups of water to your pot
  10. Put your trivet in with one pan on top
  11. Close and seal your pot
  12. Set your pot to manual 55 minutes
  13. Allow for a 10 minute NPR
  14. Remove pan after cooking and set on a cooling rack. Leave bread in the pan until cooled.
  15. Turn bread out when cooled
  16. Optional....lilikoi glaze
  17. Optional...chopped Macadamia nuts
  18. Glaze
  19. 1 cup of powdered sugar
  20. 2 tablespoons Lilikoi purée - add more purée , ½ teaspoon at a time until you reach the desired consistency
