High Protien Lemon blueberry pancakes/waffles

  • 3 tablespoons oat fiber
  • 3 tablespoons granulated sweetener
  • 2 packets true lemon powder
  • ¼ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Dash salt
  • 2.5 ounces fresh blueberries
  • 1 tablespoon light tasting olive oil or avocado oil for frying
