  • 3 tablespoons Italian seasoning
  • 2 tablespoons garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons onion powder
  • 2 bell peppers, any color, cut into 1 ½-inch pieces
  • 1 red onion, halved and cut into 1 ½-inch pieces
  • 1 zucchini, halved and cut into 1 ½-inch pieces
  • Kosher salt and freshly ground black pepper
  • ⅔ cup low-sodium chicken stock
  • 1 ½ cups shredded mozzarella (about 6 ounces)
